It is definitely that time of year, isn't it? Life is hectic with baking, decorating and holiday parties! This week is definitely a busy week for the Quinces ( mostly me! I think!) This week at work has been busy ( remember... I work retail!) I work ALL weekend... So, today on my day off I did all my running around and came home to get some work done. When I say work I mean cleaning, trying to finish some decorating, and baking! Wait... Don't forget we are going to a Christmas party Friday night and the theme is Ugly Holiday Sweaters! We all have one right??? Well, I went and got some extra goodies to make it a little bit uglier? I pulled my sweatshirt out from the deep black sea of my closet and Ronnie assured me numerous times how ugly the sweater was and I shouldn't add anything!!! I know, why would I have such an ugly thing? I took it from my Mom's closet last year! One of my Dad's clients gave it to her as a gift! I don't think she misses it much! She has never asked for it back!!!
But, the whole reason why I wanted to post this blog with you was to share a recipe with everyone! It's so easy and wins people over every time I make my "buckeyes" they are really just peanut butter balls :)
Try it out! It's a hit every pot luck I bring them to!
1 1/2 cups of creamy peanut butter
1/2 cup of butter ( softened)
1 teaspoon of vanilla extract
2 1/2 cups of semi sweet chocolate chips
2 tablespoons of shortening
4 cups of confectioners sugar
In a large bowl mix peanut butter, butter, vanilla extract and confectioners sugar. Mix all together until all mixed. Roll balls in desired size. Put in the refrigerator for 30 minutes.
Use a double boil: in a bowl put the chocolate chips and shortening until it all melts together.
Use a toothpick to dip the balls in the chocolate... put back in the fridge again so the chocolate and peanut butter hardens. For about 20 minutes... and the DONE!
